Agua de Jamaica

A tart hibiscus agua fresca sweetened to taste and poured over ice.

Steep dried jamaica flowers, strain, sweeten, and dilute. The photos are illustrative, and this sample is not marked as kitchen-tested.

  1. Rinse

    Rinse the dried hibiscus flowers in a colander under cool water.

  2. Simmer

    Bring 3 cups of water to a simmer. Add the flowers, turn off the heat, and steep 8–10 minutes.

  3. Strain and sweeten

    Strain into a pitcher. Stir in sugar while the concentrate is still warm.

  4. Dilute and serve

    Add the remaining cold water and lime juice if using. Serve over ice.

Do not boil the flowers for a long time or the drink can turn bitter. Chill leftovers in the refrigerator.
